• 12 hard-boiled eggs
  • 12 pieces bacon, cooked
  • ¼ cup maple syrup, divided



  • 1 cup flour
  • 1 cup whole grain cornmeal
  • ¼ cup sugar
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup plain, nonfat Greek yogurt
  • 2 eggs, beaten



  1. Preheat oven to 400°F.
  2. Lightly grease a muffin pan.
  3. Place all ingredients for the cornbread in a large bowl and stir until well blended. (Don’t overmix.)
  4. Pour batter into each muffin cup until each is about ¼ full.
  5. Wrap a piece of bacon around each hard-boiled egg.
  6. Place one in each muffin cup.
  7. Cover the top of the egg and bacon with more cornbread batter.
  8. Repeat with the remaining muffin cups.
  9. Bake for 10 minutes or until cooked through.
  10. Drizzle 1 teaspoon of maple syrup over each muffin.
