This idea was introduced to me by a coworker when she suggested getting an egg on my turkey sandwich at a local restaurant. I decided to give it a try and instantly fell in love. The soft yolk acts like an amazing dressing and paris so well with turkey and whole wheat bread. It also adds extra, high-quality protein and many vitamins and minerals. So give this egg-cellent twist a try for your next turkey sandwich!

Makes 1 serving
- 2 slices bread
- 1 teaspoon Dijon mustard
- ¼ avocado, sliced
- ½ large (or 1 small) Roma tomato, sliced
- 3 slices oven-roasted turkey
- ½ cup spring mix
- 1 fried egg
- Additional veggies, if desired
- Toast bread, and add mustard or your choice of spread.
- Assemble the remaining ingredients on your sandwich.
- Top with second slice of toasted bread. Enjoy!
