This idea was introduced to me by a coworker when she suggested getting an egg on my turkey sandwich at a local restaurant. I decided to give it a try and instantly fell in love. The soft yolk acts like an amazing dressing and paris so well with turkey and whole wheat bread. It also adds extra, high-quality protein and many vitamins and minerals. So give this egg-cellent twist a try for your next turkey sandwich!

Makes 1 serving

Ingredients

  • 2 slices bread
  • 1 teaspoon Dijon mustard
  • ¼ avocado, sliced
  • ½ large (or 1 small) Roma tomato, sliced
  • 3 slices oven-roasted turkey
  • ½ cup spring mix
  • 1 fried egg
  • Additional veggies, if desired

Directions

  1. Toast bread, and add mustard or your choice of spread.
  2. Assemble the remaining ingredients on your sandwich.
  3. Top with second slice of toasted bread. Enjoy!
