These energy bites remind me of pumpkin pie! I love making power balls to have on hand for a quick snack or to satisfy my sweet tooth. These are no-bake, little bites of deliciousness. You can make a batch really quickly, then keep them in the fridge for when a craving hits. If you are struggling to roll the pumpkin power balls, just chill them prior to rolling.

Ingredients

  • ½ cup pecans
  • ½ cup pepitas
  • ½ cup almond flour
  • ½ cup dates
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 2 tablespoons chia seeds

 

Directions

  1. In a food processor combine all ingredient and blend until a dough forms. 
  2. Roll the dough into tight, small balls.
  3. Refrigerate or freeze, if desired.
