Have you ever eaten matzo? It’s a traditional cracker for Passover, but it doesn’t have to be Passover for you to enjoy it! We decided to try a Passover-fusion recipe with these nachos and loved them! We added some extra veggies for both flavor and nutrients. So if you are looking for a new way to enjoy matzo, give this recipe a try!

Matzo Nachos

Makes 4 servings

Ingredients

  • 6 sheets matzo
  • 1½ cups cheddar cheese, shredded
  • ¼ cup red onions, minced
  • 1 jalapeño, diced
  • 1 small zucchini, diced
  • ½ cup cherry tomatoes, halved
  • 1 avocado, diced

Directions

  1. Break matzo into “chips” and place on a sheet pan.
  2. Top with cheese, red onions, jalapeño, and zucchini.
  3. Broil on low until cheese is melted. (Be sure to watch it to avoid burning it.)
  4. Add fresh tomatoes and avocado on top.
  5. Enjoy!
