It's the perfect comfort food that can still fit into your diet, especially with this low-calorie, protein-rich soup. Full of delicious veggies and tender lamb, this stew is will transport you to merry old Ireland! If lamb’s not your favorite, beef makes a great alternative.

Ingredients

  • 1½ pounds lamb stew meat
  • 1 white onion, chopped
  • 1 tablespoon garlic, minced
  • ¼ cup flour
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon basil
  • 1 teaspoon oregano
  • 1 teaspoon rosemary
  • ¼ teaspoon paprika
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 2 cups potatoes, diced
  • 4 cups water

Directions

  1. In a large pot, over medium-high heat, brown the lamb.
  2. Add onion, garlic, flour, and seasonings. Continue to cook until onions are tender.
  3. Add all the chopped vegetables and water.
  4. Continue to cook over medium heat until all the vegetables are tender when pierced with a fork—about 30 minutes.
