We developed this recipe as a twist on a Passover favorite and instantly fell in love. The matzo is the perfect base for the savory cream cheese and fresh veggies. Whether you’re celebrating Passover or just looking for a fun way to get some extra veggies in, this recipe is a must. It also makes a great appetizer if it's cut into smaller sections.

Ingredients

  • 2 ounces reduced-fat cream cheese
  • 1 sheet matzo
  • ⅛ teaspoon garlic salt
  • ½ cup veggies of choice, chopped

Directions

  1. Spread the cream cheese evenly onto a sheet of matzo.
  2. Sprinkle with garlic salt and chopped veggies. (I like zucchini, carrots, tomatoes, and red onions.) This doesn’t store well, so enjoy it fairly quickly after making.
