INGREDIENTS

  • 4 large eggs
  • 1 cup sugar
  • 1 cup vegetable oil
  • 15 ounces canned pumpkin
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon salt

DIRECTIONS

  1. Heat oven to 350°F (170 °C).
  2. Beat eggs, sugar, oil, and canned pumpkin until light and fluffy.
  3. Sift the flour and combine with baking powder, cinnamon, nutmeg, baking soda, and salt. Add the dry ingredients with the pumpkin mixture and stir until batter is smooth.
  4. Pour into a 13×9″ pan. Bake for about 30 minutes, then cut into 24 servings. Enjoy!
  5. These bars are delicious with a bit of cream cheese frosting, but beware of the extra calories!
