INGREDIENTS

  • 3 cups black beans
  • 1 cup chopped red peppers
  • 2 cups yellow corn, cooked
  • 1 cup chopped celery
  • ¾ cup chopped red onions
  • 5 tablespoons parsley flakes
  • ½ cup vinegar
  • 5 teaspoons Dijon mustard
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 tablespoons vegetable oil
  • 3 tablespoons water

DIRECTIONS

  1. In a bowl, combine beans, red peppers, corn, celery, red onions, and parsley.
  2. To mix dressing: whisk together the vinegar, mustard, sugar, salt, and pepper. Whisk in oil and water.
  3. Pour over salad and mix well.
  4. Cover and refrigerate.
